29Lemon Rosemary Salmon
If you really enjoy Salmon then this is a good and easy dish to make!INGREDIENTS
- 1 lemon, thinly sliced
- 4 sprigs fresh rosemary
- 2 salmon fillets, bones and skin removed
- coarse salt to taste
- 1 tablespoon olive oil, or as needed
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C).
2. Arrange half the lemon slices in a single layer in a baking dish. Layer with 2 sprigs rosemary, and
top with salmon fillets. Sprinkle salmon with salt, layer with remaining rosemary sprigs, and top with
remaining lemon slices. Drizzle with olive oil.
3. Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.

18Strawberry-Peach Chicken Salad
Here is a recipe that I found on Eat Right America. It looks so good and so easy to make that I am going to have to try it out myself. INGREDIENTS FOR DRESSING
- 2 containers (6 oz each) Yoplait® Original strawberry yogurt
- 1 cup sliced fresh strawberries
- 2 tablespoons red wine vinegar
INGREDIENTS FOR SALAD
- 6 cups Bibb lettuce leaves or mixed salad greens
- 1 lb boneless skinless chicken breasts, cooked and cut into strips
- 1 cup sliced fresh strawberries
- 1 medium peach, peeled and sliced
- 2 medium green onions, sliced (2 tablespoons)
DIRECTIONS
1. In blender or food processor, place yogurt, strawberries and wine vinegar. Cover; blend on high
speed about 15 seconds or until smooth.
2. Arrange remaining ingredients on 4 serving plates.
3. Serve with dressing. Cover and refrigerate any remaining dressing.
Calories per serving: 280

15Roasted Pumpkin Seeds
The best part about Halloween time is carving pumpkins so that you can get the delicious seeds from them! Ever since I was a child, my mom would baked the pumpkin seeds and we would have a delicious and nutritious snack for a good long while. So, seeing as it is that time of year, I figured that I would post the recipe for roasted pumpkin seeds!INGREDIENTS
- 1 1/2 cups raw whole pumpkin seeds
- 2 teaspoons butter, melted
- 1 pinch salt
DIRECTIONS
1. Preheat oven to 300 degrees F (150 degrees C).
2. Toss seeds in a bowl with the melted butter and salt. Spread the seeds in a single layer on a baking
sheet and bake for about 45 minutes or until golden brown; stir occasionally.

14Chilled Cantaloupe Soup
I do not usually make too many soups nor do I try fruit soups. But, this seems really yummy and I love cantaloupe. Definitely something that I would love to try sometime!INGREDIENTS
- 1 cantaloupe - peeled, seeded and cubed
- 2 cups orange juice
- 1 tablespoon fresh lime juice
- 1/4 teaspoon ground cinnamon
DIRECTIONS
1. Peel, seed, and cube the cantaloupe.
2. Place cantaloupe and 1/2 cup orange juice in a blender or food processor; cover, and process until
smooth. Transfer to large bowl. Stir in lime juice, cinnamon, and remaining orange juice. Cover, and
refrigerate for at least one hour. Garnish with mint if desired.
Calories per serving: 70
