13Asparagus with Parmesan Crust

I love asparagus more and more with each time I have it. Unfortunately it is not always the cheapest of vegetables to get fresh. I often get it in a can and just heat it up. But, for the times you get a fresh bundle then here is a recipe!INGREDIENTS
- 1 pound thin asparagus spears
- 1 tablespoon extra virgin olive oil
- 1 ounce shaved Parmesan cheese
- freshly ground black pepper to taste
- 1/4 cup balsamic vinegar, or to taste
DIRECTIONS
1. Preheat oven to 450 degrees F (230 degrees C).
2. Place asparagus on a baking sheet. Drizzle with olive oil, and toss to coat. Arrange asparagus
spears in a single layer. Spread Parmesan cheese over asparagus, and season with freshly
ground black pepper.
3. Bake 12 to 15 minutes in the preheated oven, until cheese is melted and asparagus is tender but
crisp. Serve immediately on warm plates, sprinkling with balsamic vinegar to taste.

12Baked Dijon Salmon
INGREDIENTS- 1/4 cup butter, melted
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons honey
- 1/4 cup dry bread crumbs
- 1/4 cup finely chopped pecans
- 4 teaspoons chopped fresh parsley
- 4 (4 ounce) fillets salmon
- salt and pepper to taste
- 1 lemon, for garnish
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix
together bread crumbs, pecans, and parsley.
3. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with
the bread crumb mixture.
4. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season
with salt and pepper, and garnish with a wedge of lemon.

04Braised Balsamic Chicken
I love balsamic vinegar and was surprised by this recipe. I would not have thought to put it on chicken. So, here is a delicious sounding recipe I found. INGREDIENTS
- 6 skinless, boneless chicken breast halves
- ground black pepper to taste
- 1 teaspoon garlic salt
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 1/2 cup balsamic vinegar
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
DIRECTIONS
1. Season chicken breasts with ground black pepper and garlic salt. Heat olive oil in a medium skillet and brown the onion and seasoned chicken breasts.
2. Pour tomatoes and balsamic vinegar over chicken, and season with basil, oregano, rosemary and thyme. Simmer until chicken is no longer pink and the juices run clear, about 15 minutes.
