22Stuffed Chicken Parmesan

Stuffed chicken always seemed like some hard thing to do to me. I never wanted to try it because it did seem difficult. This recipe seems to make it easy and healthy, which is always a plus in my book. I am going to try this when the weather warms up and I don't mind spending some extra time in the kitchen.INGREDIENTS
6 boneless skinless chicken breasts (about 5 oz each)
1 box (10 oz) Cascadian Farm® frozen organic cut spinach, thawed, well drained
2 oz 1/3-less-fat cream cheese (Neufchâtel), softened
1/4 cup shredded Parmesan cheese
1/2 teaspoon dried basil leaves
1 clove garlic, finely chopped
1/4 cup fat-free egg product
12 stone-ground wheat crackers, crushed (about 1/2 cup)
1 teaspoon dried basil leaves
1/2 teaspoon pepper
1 cup Muir Glen® organic Italian herb pasta sauce
1/4 cup shredded mozzarella cheese (1 oz)
DIRECTIONS
1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4 inch thick.
2. In medium bowl, mix spinach, cream cheese, Parmesan cheese, 1/2 teaspoon basil and the garlic until blended. Spread about 1 tablespoon spinach mixture over each chicken breast; roll up tightly. If necessary, secure with toothpicks.
3. In small shallow bowl, place egg product. In another small shallow bowl, mix cracker crumbs, 1 teaspoon basil and the pepper. Dip each chicken breast into egg product; coat with crumb mixture. Place seam side down in baking dish.
4. Bake uncovered 20 minutes. Pour pasta sauce over chicken; sprinkle with mozzarella cheese. Bake 10 to 15 minutes longer or until thermometer inserted in center of chicken reads 165°F. Remove toothpicks from chicken before eating.

16Country Carrot Cake
I would have to say that carrot cake is definitely one of my favorite kinds of cakes. If I don't feel like having a lot of chocolate but still want a cake I will usually turn to a carrot cake. My ideal carrot cake has no walnuts in it though. I can't stand walnuts. If you are looking to indulge yourself in a sweet treat then save 300 calories for a slice of this heaven. INGREDIENTS
gold medal whole wheat flour, 2 cup
florida crystals natural sugar, 48 tsp
*Bob's Red Mill Whole Ground Flaxseed Meal, 2 Tbsp., 12 serving
Baking Powder, 4 tsp
cinnamon, 2 tsp
morton salt, 0.25 tsp
silk soy milk, 1.5 cup
vanilla extract, 4 tsp
mazola canola oil, 8 tbsp
carrots, 1 cup
ginger, 1 tsp
walnuts, 1 cup
DIRECTIONS
oven to 350
mix dry ingredients add carrot ginger and wet until just mixed.
pour into lightly oiled pan and bake 25-30 min.

13Broccoli Quiche
My mom makes this meal at our house and it is a smash! Even with the picky eaters in our house they all liked this quiche. I love it..it is creamy and delicious. It is also very filling! It takes less than an hour to make and if you accompany it with a salad then you have yourself a fantastic meal in!
INGREDIENTS
1 cup egg substitute
1/4 cup fat free half and half
1/4 cup skim milk
3 oz low fat swiss cheese
1 large stalk broccoli
1/2 cup canned mushrooms
DIRECTIONS
Preheat oven to 400*F. Steam and chop broccoli.
Add broccoli and mushrooms to cake pan sprayed with nonstick cooking spray.
Mix egg substitute with half and half and skim milk.
Pour egg mixture over broccoli.
Sprinkle with cheese.
Bake in 400*F oven approximately 40 minutes.

13Shrimp & Pepper Salad
This is one of those recipes that would be good to take on a picnic or have on a warm day. The most expensive thing on the ingredients for this salad I would say is the shrimp. Sometimes the different colored peppers are a bit expensive but not as bad as shrimp. Anyway, this recipe sounds delicious as I am a huge shrimp lover. I will have to give this a try when we go have a BBQ at the park this summer.
INGREDIENTS
8 oz. cooked shrimp
1/2 cup green peppers, chopped
1/2 cup red peppers, chopped
1/2 cup yellow peppers, chopped
1/2 cup onions, chopped
1 tbsp olive oil
1 tbsp cider vinegar
1 tsp fancy dijon mustard
1/4 cup parmesan cheese, grated
DIRECTIONS
Chop green, red, and yellow peppers and onion.
Add cooked shrimp.
Make a dressing with the olive oil, vinegar, and dijon mustard.
Toss salad with dressing.
Grate fresh parmesan cheese over just prior to serving.
