23Asparagus, Chicken and Penne Pasta

I am having chicken tonight. Mine won't be this recipe because I don't have the chicken or the penne pasta but it may be similar to it. It sounds delicious. Of course mine will be broccoli and spaghetti noodles because that is all I have in my cupboards that is close to this!!INGREDIENTS
1 (16 ounce) package dry penne pasta
2 tablespoons olive oil, divided
3/4 pound skinless, boneless chicken breast meat - cut into bite-size pieces
4 cloves garlic, minced
12 ounces asparagus, trimmed and cut into 1 inch pieces
1 teaspoon crushed red pepper flakes
salt and pepper to taste
1/2 cup grated Parmesan cheese
DIRECTIONS
1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente. Drain, and transfer to a large bowl.
2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Saute chicken until firm and lightly browned; remove from pan. Add the remaining tablespoon of olive oil to the skillet. Cook and stir garlic, asparagus, and red pepper flakes in oil until asparagus is tender. Stir in chicken, and cook for 2 minutes to blend the flavors. Season with salt and pepper.
3. Toss pasta with chicken and asparagus mixture. Sprinkle with Parmesan cheese.

22Buy a new used car!
Right now gas is at an all time high! At least as far as I know! We have a gas guzzler and that is for sure! What I would love is to get a new to me car. Yes I am talking about a used car! I can not afford a new one but I also can not afford the gas prices. I am sure there are a lot of people in the same boat as I am so here I am to tell you about the used cars Wilmington NC. 19Pina Colada Cake
Do you like pina coladas? I know that song is an oldie but definitely a goodie. Now let's get to the good stuff. The food!! Here is a pina colada cake that looks fantastic.
INGREDIENTS
1 package (14 1/2 oz) angel food cake mix
1 can (8 oz) unsweetened crushed pineapple
8 oz fat-free frozen whipped topping, thawed
1/2 cup (2 oz) toasted coconut
DIRECTIONS
1. Heat oven to 350°F. Spray a 13x9-inch baking dish with cooking spray.
2. In large bowl, stir together cake mix and pineapple. Pour into prepared baking dish.
3. Bake 20 minutes or until toothpick inserted in center comes out almost clean. Cool completely on a rack.
4. Spread whipped topping over cake. Sprinkle with coconut. Cover and refrigerate until ready to serve.

12Bush's Baked Beans Queso-dillas
Here is a twist on the regular quesodilla. This includes Bush's Baked Beans. Looks delish!INGREDIENTS
12 (6 inch) flour tortillas
3 cups shredded Cheddar cheese
1 small white onion, diced
1 green pepper, diced
1 (28 ounce) can BUSH'S® Country Style Baked Beans
1 cup prepared salsa
1/2 cup sour cream
DIRECTIONS
1. Lay out 6 of the tortillas and sprinkle with cheese, onions, peppers and baked beans. Add another layer of cheese and top with remaining tortillas.
2. Cook on warm grill for three minutes on each side or until warm throughout.
3. Serve with sour cream and salsa.
