I always thought that a crepe was hard to make. That it was more than just egg, flour, and milk. I guess I was dead wrong. Here is an original crepe recipe that I swear anybody can do. In fact, sometime soon I am going to try it out.
INGREDIENTS
1 cup all-purpose flour
2 eggs
1/2 cup low-fat milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter
DIRECTIONS
Whisk flour, eggs, milk and water together in a large bowl. Mix in salt and melted butter. Batter should be pretty thin. If it's too thick, add a little bit more butter until runny.
Heat a frying pan to medium heat and lightly coat with cooking spray. When pan is warm, spoon out a ladle full of batter and pour into the middle of the pan. Pick up the pan by the handle and rotate until the batter runs to the very edges forming a thin layer batter over bottom of pan. Let cook for about a minute to a minute and a half or until golden brown; flip and cook on the other side.
Fill crepe with your favorite filling such as yogurt, fruit or jams and enjoy!

26Tortilla Vegetable pizza
I just realized that I have hardly done a recipe for the vegetarians out there! I'm so sorry! This one is for you! A pizza which has vegetables on a tortilla! Sounds simple and filling! Two things that I love when dieting and eating health. It does not look like much work needs to go into it unlike putting on a corset! No sweating here!
INGREDIENTS
Whole Wheat Tortilla
1/4 c tomato, sliced
1/2 garlic clove
1 tsp parsley
1 c green bell peppers
10 rings of onion
1/2 c mushroom pieces or slices
2 oz part skim mozzarella cheese
DIRECTIONS
Preheat oven to 400 and place tortilla on oven rack for 5 - 10 minutes on each side or to your desired crispyness. Watch carefully to prevent burning on the edges. Remove tortilla with tongs and place on cookie sheet. Apply tomato sauce (recipe below), cheese, onions, mushrooms, and bell peppers. Return to oven for 2 - 3 minutes or until cheese melts.
If you prefer softer vegetables, sautee before topping tortilla.
Tomato sauce:
Combine tomato, parsley, and garlic clove in food processor and pulse 4-5 times. Chunky tomato sauce is better for the crust of this pizza.

26Guilt Free Chocolate Cake
Do you need some chocolate cake but do not want to break your diet? Definitely you want to take a look at this recipe! It is so awesome and looks delicious and not very hard to make at all. You can not be perfectly good all the time, right? It is like the lawyers for mesothelioma...out for themselves! Take your cake and enjoy it!
INGREDIENTS
100 grams dates (3 1/2 oz)
1 cup apple juice
1/2 tsp baking soda (bi-carbonate of soda)
1 cup of self raising flour (or 1 cup of cake flour and 1 tsp baking powder)
1/2 cup unsweetened cocoa powder
1 1/2 tsp vanilla extract
4 egg whites
3/4 cup Splenda
2 tsp powdered (Icing) sugarPlace dates, apple juice and baking soda into a saucepan and bring to the boil. Remove from heat, cover and leave to cool. When cool, blend in a food processor until smooth.
Line a 7 - 8 inch (18cm) cake pan with baking paper.
Preheat oven to 335 deg F (179 deg C).
Sift the flour and the cocoa powder into a bowl and stir in the date puree and the vanilla extract.
Beat egg whites until stiff adding Splenda gradually. Fold half the egg whites into the date mixture, then fold in remaining egg whites (if mixture is a little dry add 1 - 2 tblspn of Water or nonfat milk).
Spoon mixture into prepared pan and bake for @35 minutes until a skewer inserted into the middle comes out clean. Cool on a rack and serve, dusted with the 2 tsp of powdered sugar.
NOTE: The date puree replaces the fat content, you could try prunes as a substitute and puree them, the juice could be replaced with another.
If you want to use sugar instead of Splenda use 1/3 cup unpacked Brown Sugar and add another 22 calories to each serve.

26Chicken and broccoli alfredo
If you have spent all day long looking at free mortgage quotes and need something good and quick for dinner then this recipe is for you. It is healthy as well as kid friendly. Everyone loves Alfredo and if you don't then..what the heck is wrong with you?! I love Alfredo and love putting chicken and broccoli in it. It is so delicious. Try this recipe out.
INGREDIENTS
8 oz of fettuccine
11 oz of chicken breast (I used boneless skinless for convience but have made it with leftover chicken as well)
1 bunch broccoli (269.3 grams or 9.5 oz)
2 16 oz jars of alfredo sauce (i used 1 light parmesan alfredo and 1 of creamy alfredo)
DIRECTIONS
Prep:
Chop broccoli into pieces
Chop chicken into pieces
start large pot of water to boil
Cooking:
Cook chicken through, season with italian seasoning, salt, and pepper lightly cook broccoli pieces
cook fettuccine in boiling water, drain
combine chicken, broccoli, sauces and fettucine in large pot over low to medium heat stirring to ensure even mixing and heating
serve once everything is hot.

22Pumpkin chocolate chip muffins
227 calories per serving is for these pumpkin chocolate chip muffins. They are a little high on the calories side for a snack but they will definitely be able to squash any type of craving that you may have had. That in itself is a good thing.

15 oz can pumpkin
1 cup vegetable oil
2/3 cup water
4 lrg. eggs
3 1/2 cups flour
1 TBSP cinnamon
1 TBSP nutmeg
2 tsp baking soda
1 1/2 tsp salt
1 cup chocolate chips
DIRECTIONS
preheat oven 350
Mix sugar, pumpkin, oil, water and eggs till well blended.
In separate bowl sift together flour, cinnamon, nutmeg, baking soda and salt.
Gradually add dry mixture to the wet mixture just until well incorporated. then add chocolate chips
Bake for 25-30 minutes or until toothpick comes out clean.
