0 commentsRice, cheese and tomatoes are a couple of really good things that go together really well. It is like a good tube of acne scars cream. It just goes good. I think this would make a good side dish and a very yummy one at that. It also would make a whole meal on its own as well. It is a simple recipe which wouldn't take too long to cook. The longest thing in the dish would definitely be the rice.
INGREDIENTS
1 medium onion or half large onion
3 stalks celery
3 cups cooked/canned tomatoes
tsp salt
dash of pepper
2 cups cheddar cheese
3 cups cooked rice
DIRECTIONS
Cook rice
saute raw vegetables (celery and onion) with oil
stir in cooked or canned tomatoes to vegetables
add pepper
add salt
mix in rice
add cheese
cover and simmer until cheese is melted

17Peach Salsa
I love salsa of mostly any kind and it is healthy for you. It is something that can give you the sweet as well as spicy aspect of flavors. There are so many different kinds of salsa that are out there that sometimes it is very hard to choose from them. If you are good with making salsas then try your hand at peach salsa. Unfortunately I suck at making it so I will keep buying the stuff from the store!
INGREDIENTS
20 tomatoes, chopped
6 onions, finely chopped
5 fresh peaches - peeled, pitted and chopped
5 pears - peeled, cored and chopped
1 green bell pepper, finely chopped
1 red bell pepper, finely chopped
4 cups white sugar
1 cup distilled white vinegar
2 tablespoons salt
4 tablespoons pickling spice, wrapped in cheesecloth
DIRECTIONS
1. In a large saucepan, bring to a boil the tomatoes, onions, peaches, pears, green bell pepper, red bell pepper, sugar, vinegar and salt. Reduce heat. Place the pickling spice into the mixture. Stirring frequently, simmer 1 1/2 hours, or until volume is reduced by half.
2. Discard spice bag. Transfer the mixture to sterile containers. Store in the refrigerator until use.
