12Green Chili Stew

It is definitely warming up here but unfortunately we are not out of the cold woods yet! That means that there is still time to make warm meals and comfort foods. Your crock pot still has a use so don't put it away just yet! This recipe is green chili stew that calls for some pork as well. You can make this stew as hot as you want because you can pick your temperature of peppers.
INGREDIENTS
1 lb. fresh pork roast - Cubed
1 can Ro-Tel Diced Tomatoes and Chile Peppers
1/2 cup Roasted green Chile can be mild, Medium or Hot.
6 Medium Potatoes diced 2 inch squares. with or without skin
1/2 Tsp Garlic
(You May reduce Garlic to up to 1/3 tsp)
Salt to taste aprox 1 tsp
1/3 cup Onions (optional)
onion salt or powder can also be substituted.
DIRECTIONS
Combine all ingredients in a crock pot
Fill Crock Pot to an inch from the top with water.
cook for 6 hours

11Asian Miracle Soup
Asian Miracle Soup...I don't know if it is because it has the word miracle in it or what, but this soup sounds powerful. The ingredients sound delicious although I have still not tried tofu so I do not know how I would like that. Everything else seems delicious and it does not seem like it would take too much to make. I would love to be able to try some of this Asian Miracle Soup!
INGREDIENTS
1 tbs. peanut oil
1/2 cup chopped fresh ginger
1/2 cup chopped garlic
160 oz. fat free chicken broth
4 cups of water
1 cup cornstarch
21 oz. extra firm tofu
16 oz. straw mushrooms, canned
16 oz. bamboo shoots, canned
1 cup soy sauce
1/2 cup rice vinegar
2 tbsp. sugar
2 tsp. crushed red pepper flakes
40 oz. oriental style frozen veggies
2 lb. shrimp
1/4 cup fresh cilantro
20 oz. spinach
DIRECTIONS
Heat oil in large pot, add ginger and garlic, cook until tender. Combine 1 cup broth with cornstarch and add.
Add remaining broth, tofu. mushrooms, bamboo shoots, soy sauce, vinegar, sugar and pepper.
Bring to boil and cook until thickened
Add frozen vegetables, shrimp and cilantro.
Simmer until shrimp is just opaque about 10 minutes.
Stir in spinach just until wilted.

07New Year's Day Black-Eyed Peas
I know it is not New Years..in fact it is awhile from it! I am not looking to the New Year or anything yet but we have a tradition here in this house as I know that many of you have the same kind of tradition. If you have black eyed peas on New Years day you will have good luck all year around. Now, I am not quite sure if these beans have anything to do with how good nor bad your year goes, but we do it anyway. Here is a recipe to make your own!
INGREDIENTS
1 pound dry black-eyed peas
2 cups chopped cooked ham
salt and pepper to taste
1 pinch garlic powder
2 onions, diced
1 (14.5 ounce) can whole tomatoes
DIRECTIONS
Place black-eyed peas in 8 quart pot. Add enough water to fill pot 3/4 full. Stir in ham and diced onions, and season with salt, pepper, and garlic powder. Place tomatoes in a blender or food processor, and blend until the tomatoes are liquefied. Add tomatoes to pot. Bring all ingredients to boil. Cover the pot, and simmer on low heat for 2 1/2 to 3 hours, or until the peas are tender.

28White Chili
Have you ever heard of white chili before? I have not and it really interests me! I can not believe that I have never heard of it! I have only ever had the normal brown chili that I am accustomed to! Wow though does this sound absolutely delicious! It seems like it would be a tad bit more healthy as well since you use turkey instead of beef! Have you tried White Chili before? How was it?
INGREDIENTS
1 pound ground turkey, browned
1 cup medium salsa
1 cup frozen corn kernels
1 cup water
2 (14 ounce) cans great Northern beans, rinsed and drained
1 (8 ounce) package jalapeno pepper Cheddar cheese, cubed
DIRECTIONS
In a large pot or saucepan combine the browned turkey, salsa, corn, water, beans and cheese. Stir together and simmer over low heat for about 30 minutes, or until cooked through and cheese has melted.

28Cozy Cottage Beef Stew
Here is yet another leave it and crawl back under the covers kind of meal! I am really loving this type of meal! Beef stew is on todays menu! Who doesn't look the heartiness and chunkiness of beef stew? It is a wonderful meal that you could even have for a couple different meals! All you do is throw all these ingredients in a slow cooker and leave it! Best for cold nights and days where you have too much to do but still would like to have a hot meal!
INGREDIENTS
3/4 pound beef stew meat, cut into 1 inch cubes
2 onions, diced
3 cloves garlic, minced
1 large stalk celery, minced
2 carrots, finely chopped
1/4 pound green beans, cut into 1 inch pieces
8 ounces fresh mushrooms, coarsely chopped
3 potatoes, peeled and diced
1 (14.5 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
1 bay leaf
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
2 (14.5 ounce) cans fat-free chicken broth
1/2 cup all-purpose flour
2 (10.5 ounce) cans beef consomme
DIRECTIONS
1. In a slow cooker, combine beef, onions, garlic, celery, carrots, green beans, mushrooms, and potatoes. Pour in the tomatoes and tomato sauce. Season with bay leaf, pepper, thyme, and marjoram. Stir together chicken broth and flour. Pour chicken broth mixture and beef consomme into slow cooker, and stir.
2. Cover, and cook on Low 6 to 10 hours. Remove bay leaf before serving.
