10Rhubarb Custard Pie

My husband bought some Rhubarb the other week. Of course, he had to have it but has yet to actually make anything with it. That usually happens. I do not think I have ever had rhubarb so I will not be the one baking anything with it. Cupcakes and cakes are my specialties. Not pies! Like bar stools sitting in the middle of a room, with pies I am out of place. So, here is a recipe for him to make on Thanksgiving!
INGREDIENTS
1 recipe pastry for a 9 inch double crust pie
3 eggs
2 cups white sugar
1/4 cup all-purpose flour
1 teaspoon vanilla extract
3 tablespoons milk
1 tablespoon butter
4 cups diced rhubarb
DIRECTIONS
1. Roll out pastry for bottom crust, and place in a pie dish. Place rhubarb in crust.
2. In a large bowl, beat the eggs slightly. Mix in sugar, flour, vanilla, milk, and butter or margarine. Pour mixture over rhubarb. Cover with top crust, and seal the edges.
3. Bake at 400 degrees F ( 205 degrees C) for 50 to 60 minutes.

10Tim's Green Bean Casserole Extraordinaire
Green bean casserole's are a staple during Thanksgiving. I mean it, it is! There is not a year that goes by in my household that we do not have this. It is like driving in snow with tire chains, it is a must. So, here I found on allrecipes.com a recipe that kicks it up a notch. No, it isn't from Emeril! It's Tim's! Whoever that is! Try it out!
INGREDIENTS
1/4 cup butter
1/4 cup all-purpose flour
2 cups sour cream
2 cups shredded Swiss cheese
4 (14.5 ounce) cans French-style green beans, drained
2 cups cornflakes cereal, crushed
1/4 cup butter, melted
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart casserole dish.
2. Melt 1/4 cup of butter in a large skillet. Stir flour into the butter to make a paste. Blend sour cream into the flour paste, stirring constantly. When the mixture is hot and bubbly, remove from heat, and stir in Swiss cheese. When the cheese has melted, add the green beans, stirring until they are coated. Pour the entire mixture into the prepared casserole dish.
3. In a small bowl, mix together the cornflakes and melted butter. Sprinkle over the top of the green beans.
4. Bake uncovered for 30 minutes in the preheated oven, or until bubbly and golden brown.

02Potato Medley
Here we have potato medley. A side dish which is mainly made up of potatoes. Potatoes are very filling and delicious to have as a side or part of your main dish. This side is said to go well with salmon or chicken but I am sure it is good with just about everything.
INGREDIENTS
2 regular potatoes
2 sweet potatoes
oregano
olive oil
salt
DIRECTIONS
1. Preheat oven to 415 degrees.
2. Cut all of the potatoes into cubes.
3. Coat baking pan with olive oil and put potatoes in and sprinkle withh salt and oregano.
4. Bake for 40 minutes or until tender.

10Rice w/mushrooms and spinach
My sister hates mushrooms and spinach. I love them! I think they are really tasty and make a meal better. So I try different ways to mix them in with meals. This recipe uses them both with some rice and that is good way to put them in to use. Well thankfully diet pills isn't part of her vocabulary.
INGREDIENTS
Mushrooms, fresh, 1 cup, pieces or slices
Garlic, 2 cloves
Spinach, frozen, 0.5 cup
Pepper, black, .5 tsp
Chicken Broth or Bouillon, 2 cup (8 fl oz)
Water, tap, 1 cup (8 fl oz)
White Rice, long grain, 1 cup
DIRECTIONS
Chop mushrooms. Combine all ingredients in a large saucepan. Bring to a boil then cover and reduce heat to a simmer. Cook for about 40 minutes or until liquid is absorbed and rice in tender.
Makes about 8 serving (1/2-cup each)

21Cheesy rice and tomatoes
Rice, cheese and tomatoes are a couple of really good things that go together really well. It is like a good tube of acne scars cream. It just goes good. I think this would make a good side dish and a very yummy one at that. It also would make a whole meal on its own as well. It is a simple recipe which wouldn't take too long to cook. The longest thing in the dish would definitely be the rice.
INGREDIENTS
1 medium onion or half large onion
3 stalks celery
3 cups cooked/canned tomatoes
tsp salt
dash of pepper
2 cups cheddar cheese
3 cups cooked rice
DIRECTIONS
Cook rice
saute raw vegetables (celery and onion) with oil
stir in cooked or canned tomatoes to vegetables
add pepper
add salt
mix in rice
add cheese
cover and simmer until cheese is melted
