17Ginger-Spiced Cucumbers
This recipe kind of reminds me of vinegar and cucumber with onions. I love those so this is a bit of a twist on that dish. It sounds really good with ginger and the vinegar and all that thrown together. Seems to be very quick to make which I love.

1/4 cup mirin (Japanese sweet wine)
1/8 cup packed brown sugar
3 teaspoons grated fresh ginger
1/8 cup fresh lime juice
1 large cucumber, thinly sliced
1/4 cup thinly sliced onion
DIRECTIONS
1. In a serving bowl, stir together the red wine vinegar, mirin, brown sugar, ginger and lime juice. Add the cucumber and onion, and toss gently to coat. Chill for 30 minutes to blend flavors before serving.
