06Chocolate-Covered Strawberry Oatmeal

Doesn't that sound all sorts of bad? That just makes you feel like you are not staying on plan by just reading the title! Well, with me anyway. I would love to wake up to having some chocolate covered strawberry oatmeal though! Sounds like a good way to start the day!
INGREDIENTS
- Quaker Old-Fashioned Oatmeal, Quick Cooking- .5 cup uncooked
- Frozen unsweetened chopped strawberries- 1 cup (about 140 grams frozen, or 6 berries)
- Aria Vanilla Protein Powder- 1 serving (2 scoops)
- Nesquick Sugar-Free Cocoa Powder- 2 Tablespoons
- Tap water- .5c
DIRECTIONS
1. In a microwave-safe bowl combine oatmeal, strawberries, and water.
2. Microwave for two minutes.
3. Stir in Aria Protein Powder and Nesquick Cocoa until well-blended. If necessary, add additional water to fully combine ingredients.
4. Return to microwave and cook until desired consistency is reached (I cooked for an additional 2 minutes because I like my oatmeal thick!)

04Eggnog Quick Bread
There is a lot of bread baking going on in my house during this time so I am trying to find new recipes to do during it. Just to put my own into it. I found this recipe at Allrecipes.com which is a bread that utilizes Eggnog. Eggnog is a favorite holiday drink anywhere I think and putting it into a bread seems very interesting. INGREDIENTS
2 eggs, beaten
1 cup eggnog
2 teaspoons rum flavored extract
1 cup white sugar
1 teaspoon vanilla extract
1/2 cup butter, softened
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease bottom only of a 9x5 inch loaf pan, or three 3x5 inch loaf pans.
2. Blend together the eggs, eggnog, rum extract, sugar, vanilla and butter.
3. Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan.
4. Bake bread in large pan for 40 to 60 minutes, or until a tester inserted in the center comes out clean. Breads baked in the smaller pans require 35 to 40 minutes. Cool for 10 minutes, and remove from pan. Cool completely, wrap tightly and store in refrigerator.

01Whole-Grain Buttermilk Waffles
Breakfast is a pretty big thing for my family at Christmas time. We always cook a big breakfast for everyone and have breakfast as a family. Every other day is fend for yourself, but Christmas is special. This year I am in charge of breakfast. I'm sure my mom will help and my little brother said he wanted to help as well. So, I have been looking for different recipes that look delicious. One of the recipes I have found is for waffles. Whole grain buttermilk waffles to be exact!
INGREDIENTS
1 cup Fiber One® original bran cereal
1 1/4 cups buttermilk
1 egg, slightly beaten
2 tablespoons vegetable oil
1 teaspoon vanilla
3/4 cup whole wheat or all-purpose flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Maple syrup, if desired
Fresh raspberries, if desired
DIRECTIONS
1. Heat waffle maker. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In large bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in egg, oil and vanilla. Stir in remaining ingredients just until smooth. (Batter will be thick.)
3. For each waffle, brush hot waffle maker with vegetable oil. Spread batter onto center of hot waffle maker. (Waffle makers vary in size; check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker.
4. Bake about 5 minutes or until steaming stops and waffle is golden brown. Carefully remove waffle. Serve immediately. Repeat with remaining batter. Serve with maple syrup amd raspberries.

A muffin is a good and easy breakfast. These muffins are an excellent source of fiber!INGREDIENTS
- 1 cup Fiber One® cereal
- 2 egg whites or 1 egg, slightly beaten
- 1/4 cup vegetable oil
- 2 containers (6 oz each) Yoplait® Original 99% Fat Free French vanilla yogurt
- 1 1/2 cups all-purpose flour
- 1/3 cup packed brown sugar
- 1 1/4 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup fresh raspberries or blueberries
DIRECTIONS
1. Heat oven to 400°F. Place paper baking cup in each of 12 regular-size muffin cups, or grease
bottom of each muffin cup with shortening. Place cereal in resealable food-storage plastic bag;
seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, stir together egg whites, oil and yogurt. Add cereal, flour, brown sugar, baking
soda and salt; stir just until dry ingredients are moistened. Gently stir in berries. Divide batter
evenly among muffin cups, filling each 3/4 full.
3. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.

07Salsa Veggie Scamble

Eggs are a classic breakfast and is packed with protein. It will fill you up and keep you going until lunchtime. This recipe is delicious and will be sure to please everyone!
Ingredients
- 2 cups cholesterol-free egg product
- 1 cup low fat cottage cheese
- 1 cup chopped green bell pepper
- 1/2 cup chopped onion
- 1/2 cup reduced fat mild cheddar cheese
- 1/2 chunky salsa
Directions
>Beat egg product and cottage cheese in small bowl with wire whisk until well blended.
>Spray medium nonstick skillet with cooking sprat. Add green pepper and onion; cook on medium high heat 2 to 4 minutes or until tender; stirring occasionally.
>Add egg product mixture and cheddar cheese. Reduce heat to medium. Cook 8 to 10 minutes or until set, stirring frequently. Serve topped with salsa.
