I’m looking for a healthy recipe using roasted red peppers, must be simple and quick.
To be more specific, I don’t need to know how to roast the red peppers, I would just like some easy and tasty ways to use them. Thanks!

Fry some lean mince in olive oil with onion and garlic and whatever fresh herbs you have to hand, season, stuff into the peppers and bake them in the oven.

brush them with olive oil and broil them in the oven on some tin foil. Once the skin is charrred and black remove from oven and fold the tin foil over them and allow to steam from their own heat for 5 minutes. Peel the charred skin off and you have got fresh roasted red peppers. The possibilities with these are endless. You could simply grill some chicken breasts and serve with the peppers. You could combine them with chick peas and some olive oil in a food processor to create a smooth paste (red pepper hummus) and serve with pita bread.
As a main dish, just boil bow tie pasta until al dente, drain but do not rinse…
Make a simple sauce of butter or extra virgin olive oil, garlic, shallots, sliced mushrooms and toss, add slices of roasted peppers and 3-4 large basil leaves, slices thin (chiffonafe) to heat, toss again, Sprinkle generously with parmesan. (You can substitute chicken or vegetable stock for butter). Garshish with fresh basil.

Spicy red pepper hummus serve with Wasa flat bread and veggie sticks (carrots, celery, zucchini)
INGREDIENTS:
15 ounces Garbanzos, drained
2 tablespoons Tahini
7 ounce jar roasted red peppers
1/2 cup breadcrumbs
2 garlic cloves, crushed
S.1 tablespoon extra virgin olive oil
1 tablespoon lemon juice, or to taste
1 1/2 teaspoon ground cumin
1/3 cup cilantro, chopped
1/4 teaspoon red pepper flakes, crushed
1 tablespoon hot pepper sauce
salt to taste
DIRECTIONS:
Combine all ingredients in blender or food processer until smooth.
Adjust seasoning with more lemon juice and salt to your tasting.
Warm a basil tomato tortilla (or just a plain one, or any flavor you like) and spread with an herbed cream cheese. Top with roasted red peppers, fresh cucumber, roasted zuchinni, and alfalfa sprouts. Roll up and slice into sections, or eat as is. This is really good; if you want non veggie, I suggest turkey lunch meat. Enjoy!
