What are some good, simple and healthy recipes that can be made with tortillas?


Hey there, so I was wondering if anybody knew of any good and simple but healthy recipes that can be made with tortiallas or that involve tortillas? I have the smaller ones, they are whole wheat, and I don’t know what to use them for, or what to make with them, I’m a vegetarian btw.

    Take some veggies like peppers and onions and put them on one shell with some cheese. Put another shell on top and fry them till the cheese fuses them together, this is an excellent meal.

    A really simple one my son likes are quesadillas, I just sprinkle some cheese on it and fold it over and nuke it for a few seconds to melt the cheese, he asks for them all the time.

    I make these ALL the time when I have leftover tortilla shells after tacos

    For a Savory snack
    Ingredients
    10-12 flour tortillas
    vegetable oil (or spray)
    spices
    Directions
    1Cut tortillas into 8 wedges.
    2Brush or spray baking sheet with oil.
    3Arrange tortilla wedges in a single layer on the baking sheet and brush or spray lightly with oil.
    4Sprinkle with seasonings: salt or seasoned salt, chili powder
    5Bake at 325 until crisp and lightly browned, approximately 10 minutes.

    Or for a SWEET snackIngredients

    You can sprinkle them with a little water or spray them with non-stick cooking spray. Sprinkle cinnamon sugar on them and cut into wedges and bake until crispy. I like to chop up fruit for a fruit “salsa” to go with them. You could also do the same thing with “savory” seasonings.

    Think of them as bread. Anything you can put on a sandwich, you can put into a tortilla and roll it up.

    One thing I like to do is lay a piece of cheese on a tortilla and microwave until the cheese has melted, roll it up and eat. Yummm.

    Put anything you enjoy eating in the tortilla and eat like taco. I also use tortillas in place of pasta in a lasagna like dish. I stack tortillas, chicken(you can leave out), tomatoes, onions. green peppers, then cheese then layer again starting with tortillas

    Roll your tortillas with a mix of Black Beans and Chickpeas, diced zucchini, onions, peppers(any veggies that you like). Roll them and place them in a sprayed casserole dish. Then, mix a can of diced tomatoes (juice included) with 1-2cloves of minced garlic, 2tsp. chili powder, or stir in a package of taco seasoning. Pour over top of tortillas, top with shredded cheese and bake in your oven at 375 for about 30 minutes. You might have to add extra tomato juice so they stay moist. These are very healthy, low in fat, and high in protein, without any meat, and simple to make. Top with lettuce, tomatoes, sour cream and salsa before serving.

    Try some grilled veggies and cheese. A favorite of mine is leftover chicken with tomatillas, cilantro and potatos and onions with a squeeze of lime juice at the end and some salt and pepper to taste. I like it best with yellow corn tortillas.

    My kids and I love to spread each tortilla with a tablespoon of apple butter (applesauce works too), diced apples and shredded cheese. Fold like a Quesadilla. Spray a pan with non-stick spray and heat both sides…maybe 1-2 min. per side. Delicious and makes a great snack.
